**Cherry and Chocolate Mousse Cake Recipe**

 Ingredients:

 For the Cake Base:
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup boiling water

For the Cherry Filling:
- 1 ½ cups fresh or frozen cherries, pitted
- ¼ cup sugar
- 2 tbsp cornstarch
- ½ cup water
- 1 tsp lemon juice

 For the Chocolate Mousse:
- 200g dark chocolate, chopped
- 1 ½ cups heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 2 egg whites

For Garnish (Optional):
- Fresh cherries
- Chocolate shavings
- Whipped cream 

Instructions:

 1. Prepare the Cake Base:
   - Preheat your oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan.
   - In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
   - Add the egg, milk, oil, and vanilla extract. Beat until the mixture is smooth.
   - Stir in the boiling water until the batter is thin.
   - Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
   - Allow the cake to cool completely before removing it from the pan.

 2. Prepare the Cherry Filling:
   - In a saucepan, combine cherries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens and becomes syrupy.
   - Stir in the lemon juice and remove from heat.
   - Let the cherry filling cool before assembling the cake.

 3. Prepare the Chocolate Mousse:
   - Melt the dark chocolate in a heatproof bowl over simmering water (double boiler method). Let it cool slightly.
   - In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
   - In another clean bowl, whisk the egg whites until stiff peaks form.
   - Gently fold the whipped cream into the melted chocolate, then fold in the egg whites until fully combined.

 4. Assemble the Cake:
   - Slice the cake base in half horizontally to create two layers.
   - Place the bottom layer on a serving plate and spread a thin layer of cherry filling over the top.
   - Add a generous layer of chocolate mousse on top of the cherries.
   - Place the second cake layer on top and repeat with more cherry filling and mousse.
   - Spread the remaining mousse around the sides and top of the cake for a smooth finish.

5. Garnish and Serve:
   - Garnish the cake with fresh cherries, chocolate shavings, and a dollop of whipped cream for a beautiful presentation.
   - Refrigerate the cake for at least 2 hours to set before serving.
